7 Ingredient Chocolate Avocado Pudding

Yes you read right. Chocolate Avocado Pudding. Why would someone want to make chocolate pudding using avocado? Well, with 7 easy ingredients, I might just convince you.

To be 100% honest, chocolate pudding using avocado ends up being more like a mousse than a regular pudding. It’s thick and rich and perfect for those trying to find sweet healthy treats. By finding a balance of fats, sweet, & a pinch of salt mixed with rich chocolate, you might think you’ve splurged on one of those incredibly decadent but hella expensive teensy pots of creamy chocolate from a boutique store in a chic part of town.

Being that I’m not one that loves a huge novel before getting to the recipe on other people’s blogs, let’s get right to it then.

What You’ll Need:

1 Large Semi-Ripe Avocado

1 Tablespoon Unrefined Coconut Oil (this is the one I used)

1 Tablespoon Nut Milk

1.5 to 2 Tablespoons Unsweetened Cacao Powder (This is one of my favorites)

1/4-1/2 Teaspoon Sea Salt

1 Tablespoon or to taste Maple Syrup (this is the one I used)

1 Teaspoon Vanilla Extract

Chocolate Shavings For Topping (Optional)

Food Processor (here’s one for less than $20)

#1 Cut open and remove the pit of the avocado. Scoop out the avocado into the food processor.

#2 Add the oil and nut milk to the food processor. Pulse for a couple seconds until smooth.

#3 Add the sea salt, maple syrup, vanilla extract, and cacao powder. Pulse until very smooth.

#4 Taste the pudding and add additional maple syrup for sweetness if needed.
